Modeling Chlorine Dynamics and Produce Cross-Contamination in Produce Wash-Cycles

Abstract

We present simple quantitative descriptions of the influence of chlorine in effectively dealing with pathogen survival and cross-contamination during a produce wash-cycle of lettuce and spinach. Our hope is that the model can give the framework for developing accurate estimates of the chlorine levels as well as the pathogen levels (if any) during typical wash-cycles by knowing their initial conditions.
