Abstract
Through the use of semi-structured interviews, results indicate that among 29 independently-owned casual restaurants in Japan, sustainability initiatives are usually incremental efforts customized to each restaurant’s circumstances. It is hoped that this preliminary work will spur more studies on sustainability practices in the Japanese restaurant industry.
